I have had a Weight Watchers book sitting in the cupboard for a few years so when I decided to do this I grabbed it out of the cupboard and started flicking through, I found endless yummy looking meals. My favourite is Veg Quiche. Veg Quiche is easy all you need is: 1 corgette 1 carrot 2 peppers 1 red and 1 yellow (or orange) 1 red onion Cherry tomatoes and whatever other veg you like and roast it in the over with a litte olive oil and herbs for around 25 mins, meanwhile make mashed potatoe and mix with horseradish and then make a potato base in a caserol dish. When the veg is cook place onto the mash and grate a little chesse on the top and place under the grill for a few mins until golden brown. MMMM yummy!!!! I have found loads others! My options are endless
